Week 4 – Roasted Broccoli, Cherry Tomatoes & Red Onion
This simple roasted veggie dish uses fresh broccoli, cherry tomatoes, and red onions from Sobrino Farms. Bright, savory, and easy, it works as a side or tossed into pasta, rice, or grain bowls.

Ingredients (serves 2–4):
• 1 head broccoli, cut into florets
• 1 cup cherry or grape tomatoes
• ½ red onion, sliced
• 2 tablespoons olive oil
• Salt and pepper to taste
Optional: garlic powder or dried Italian herbs

Instructions:
1. Preheat oven to 400°F.
2. Toss broccoli, tomatoes, and red onion with olive oil, salt, and pepper.
3. Spread on a baking sheet in a single layer.
4. Roast for 20–25 minutes until broccoli is tender and lightly browned.
5. Serve warm.
