Week 2 – Swiss Chard Egg Scramble

This simple egg scramble uses fresh Swiss chard and sweet onions from Sobrino Farms. It’s quick, filling, and works for breakfast, lunch, or dinner.

Ingredients (serves 2–4):

• 1 bunch Swiss chard, chopped (from Sobrino Farms)

• ½ sweet onion, diced

• 6 eggs

• 1 tablespoon olive oil or butter

• Salt and pepper to taste

Optional: diced tomatoes or cheese

Instructions:

1. Heat olive oil or butter in a skillet over medium heat.

2. Add onion and cook for 2–3 minutes until soft.

3. Add Swiss chard and cook until wilted.

4. Beat eggs in a bowl and pour into skillet.

5. Stir gently until eggs are cooked through.

6. Season with salt and pepper and serve warm.
