Week 2 β Honey Roasted Carrots + Sweet Onions
This easy roasted veggie side uses fresh carrots and sweet onions from Sobrino Farms. Itβs lightly sweet, savory, and perfect alongside just about any meal.

Ingredients (serves 2β4):
β’ 4β5 carrots, sliced
β’ Β½ sweet onion, sliced
β’ 1Β½ tablespoons olive oil
β’ 1 tablespoon honey
β’ Salt and pepper to taste
Optional: garlic powder or fresh thyme

Instructions:
1. Preheat oven to 400Β°F.
2. Toss carrots and onions with olive oil, honey, salt, and pepper.
3. Spread on a baking sheet in a single layer.
4. Roast for 20β25 minutes, flipping halfway through, until tender and lightly caramelized.
5. Serve warm.
