Week 2 – Honey Roasted Carrots + Sweet Onions

This easy roasted veggie side uses fresh carrots and sweet onions from Sobrino Farms. It’s lightly sweet, savory, and perfect alongside just about any meal.

Designed around Week 2 Green & Fresh Produce Boxes.

Ingredients (serves 2–4):

β€’ 4–5 carrots, sliced

β€’ Β½ sweet onion, sliced

β€’ 1Β½ tablespoons olive oil

β€’ 1 tablespoon honey

β€’ Salt and pepper to taste

Optional: garlic powder or fresh thyme

Instructions:

1. Preheat oven to 400Β°F.

2. Toss carrots and onions with olive oil, honey, salt, and pepper.

3. Spread on a baking sheet in a single layer.

4. Roast for 20–25 minutes, flipping halfway through, until tender and lightly caramelized.

5. Serve warm.
