Week 2 – Garlic Kale + Potato Skillet
This simple skillet meal uses fresh kale, potatoes, and sweet onions from Sobrino Farms. It takes about 20 minutes to make and works as a side or full meal.

Ingredients (serves 2–4):
• 1 bunch fresh kale (from Sobrino Farms)
• 2–3 potatoes, diced
• ½ sweet onion, sliced
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• Salt and pepper to taste

Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add onion and cook for 3 minutes until soft.
3. Add potatoes, cover, and cook until tender.
4. Stir in garlic and kale.
5. Cook until kale wilts. Season and serve.
